Primal Burgers With Chilled Zucchini Salad And Balsamic Onion Reduction

Squash might be the best botanical fruit in the history of all foods. So versatile, sweet or savory… aaaaand you can pretty much eat it until your face falls off without becoming diabetic. (in other words, my kind of food)

This week there was a veritable bounty of summer squashes in my local Rainshadow Organics CSA basket. I needed to make quick work of devouring a million pounds of them before they went bad. Challenge accepted!

So much of the produce we love has the type of nutrients that degrade with heat, so if you can eat it raw and not feel like you’re choking down a tree, you are going to be able to take more nutrition out of your organic produce. That is how I came up with this primal burger with all the nomz and all the nutrients.

Sauce
  1. Heat onions and garlic with oil on medium heat until translucent. Add balsamic and stock and reduce by half. Puree with an immersion blender or in a regular blender until smooth.
Burgers
  1. Mash all the burger fixings in a bowl. Portion into four patties and grill or pan sear burgers.
Salad
  1. Spiralize (or chop) zucchini. Thinly slice Thai basil and green onions. Place in a bowl and squeeze lemons over the salad. Add olive oil. Toss together.

Assemble any way you feel ‘cause for damn sure it’s going to be delicious!
